Mikey grew up in Oldham County, and after working in advertising for some years found an interest in sustainable agriculture. He spent a year at Field Day Family Farm in Louisville apprenticing under Ivor Chodkowski, and then a year on Vashon Island in the Puget Sound at Pacific Crest Farm.

Erin is originally from Dandridge, TN. She studied at Sewanee and then worked for ecology and food centered nonprofits in Nashville for a number of years, before moving to Louisville in 2015 to pursue a masters degree in Urban Planning. She began working for The Food Literacy Project, where she currently serves as Program Manager. Erin runs the Youth Community Agriculture Program, a teen employment program for youth on two urban farms where high schoolers learn about farming and food systems.

In 2018 Mikey and Erin started Boxcar Acres, an organic equivalent vegetable farm in Georgetown, IN, on a historic farm property owned by Indiana Landmarks. In 2019 they moved to Lanesville, IN, expanded the farm by a few acres, and added a small flock of chickens. They are both very passionate about connecting people to quality, healthy, fresh food, and jumped at the chance to take over the work of Pink Elephant Farm in Smithfield, KY to keep their Full Diet CSA going. They now manage a few acres of organic vegetables, a small herd of dairy cows for the herdshare raw milk program, and a small flock of chickens and ducks for egg production.
